Homemade Mayonnaise

Delicious homemade mayonnaise in 2 minutes ! Using the immersion blender, you get a jar full of creamy, perfectly emulsified, better-than-store-bought mayonnaise!

This mayonnaise is super easy and quick to make. It’s healthier than store bought mayonnaise and costs a fraction of the price to make. You can also add your own seasonings and herbs for a more flavourful version of the original recipe. Best of all, you likely have all the ingredients in your kitchen right now.


Homemade Mayonnaise in 2 Minutes


Ingredients


  • 1 large egg

  • 1 tablespoon (15 ml) lemon juice (from 1/2 a lemon)

  • 1 teaspoon Dijon mustard

  • 1 medium garlic clove, minced (optional but recommended)

  • 1 cup (240 ml) of a light tasting oil such as avocado oil

  • dash of salt, adjust to your taste

Directions

  1. Place egg, lemon juice, and mustard in a cup or jar that just fits the head of your immersion blender.

  2. Add garlic, if using. Pour oil on top and let settle for 15 seconds. Place head of immersion blender at the bottom of the cup and turn it on high speed. Do not pulse or move the head. As mayonnaise begins to form, slowly tilt and lift the head of the immersion blender until all the oil emulsified.

  3. Season mayonnaise to taste with salt.

  4. Refrigerate in an airtight container for up to 2 weeks.

Note: It is important that the jar you use be just slightly larger than the head of the immersion blender. The head of the blender must be firmly planted at the bottom of the jar before you turn it on and once started must stay there until the mayonnaise begins to form. Once the mayonnaise begins to form, you can then begin tilting the blender to finish emulsifying. If your mayonnaise is too watery, that means it has not emulsified properly. Let the mixture settle and separate and then try blending again. Enjoy !
